| The Cortese grapes are not hand harvested until November by which time they have begun to shrivel. Allowed to dry further in wooden crates the grapes are not pressed until December. The concentrated fruit juice is fermented in small French oak barrels then matured for 6 months in stainless steel. A full bodied wine of great flavour and intensity. |
